Presentation: The first thing to notice about Bruce is his nervousness. He's often holding his hands together or stuffing them in his pockets, keeping himself very aware of where he is in relationship to his surroundings. He tries to go unnoticed whenever possible, keeping his head low and face unseen. He turns away from police officers, security guards, and especially military members on instinct. He looks like he's been down on his luck for a very long time.
While he's obviously very intelligent, he doesn't show off. He's got a secure sense of his own abilities that carries through despite his nervousness. He's clearly very altruistic, and has a good sense of responsibility. Most of the people who have seen him at all over the past few years saw him in the context of an unlicensed medical doctor providing aid in crowded slums in India. This is how most people interact with him, as a quiet, helpful man doing his best to stay under the radar.
That being said, he's very sarcastic and self-deprecating. When he's around people who are aware of the Hulk, he references it constantly; he's often the only one who will. Though the Hulk is associated with extreme rage, Bruce himself appears unflappable until you really start (metaphorically) poking.
As the Hulk, he's a lot more straightforward. Depending on the circumstances that brought about his transformation, he can be aware of who his allies are, or he could just start rampaging. He's a lot more focused as the Hulk if he transforms willingly. He doesn't have much capacity for planning; if something is hurting him, he hurts it back. He doesn't remember much of what happened when he was the Hulk, but when he's the Hulk, he'll protect the people he cares about as Bruce.
Motivations: Bruce's original motivations were the advancement of scientific knowledge with his work, with the hope of using his radiation studies to improve people's lives. His confidence in his abilities was the problem here, when he was so sure he had the correct Super Soldier formula that he tested it on himself. The worst part about his transformation is that he isn't sure whether or not it worked; the original Super Soldier serum was supposed to amplify personality traits, and if the formula worked, he has to face the fact that the Hulk is who he really is.
When he first became the Hulk, he caused a lot of damage and hurt a lot of people, including people he really cared about. He's still dealing with this guilt, and it's a main part of his motivation even today. He helps people to give back to the world, not just because he's altruistic but because it's the least he can do after all the harm he's done. Self-loathing is another large part. There's no denying that he is very dangerous, and it reached a point where he tried to kill himself. That the Hulk prevented him from doing so only made it worse. It's not as explicit as it used to be, but his casual comments about how terrible he is stem from this hatred. At the same time, he's incredibly aware of how people treat him like a bomb about to go off, and he hates the way they go about it. A lot of his references to the Hulk are attempts to get people to actually acknowledge it, instead of pretending like he's just a normal scientist. He knows he can control it, but other people don't, and yet they still pretend.
This has all been moving in a more positive direction after the events of the Avengers movie, but even though he's confirmed that he can do good as the Hulk, it's still a touchy subject. He's definitely embraced it, which is how he's confident enough in his abilities to control the Hulk to put himself in stressful situations where an accident would be disastrous. Instead of trying to suppress his anger, he acknowledges it and works with it to keep himself in control. It's only when he's under a lot of external manipulation that he loses it, which tends to set him back with regards to accepting himself.
One last important thing to note, especially for this game, is that he does not react well to being used as a weapon. The military is after him to utilize the Hulk serum, he's suspicious that Fury and SHIELD are just using him to fight their battles, and he gets visibly agitated when it comes out that Fury is making weapons, to the point where the others react as if he's going to transform. In game, he's going to be very wary of being used to entertain others, especially if there's a possibility of his powers coming back.

Not the specifics, of course, but he's been living with the possibility of being captured for the better part of a decade now, so he was aware of the risk. It's that he's standing here, acutely aware of the fact that there's a group of people who are likely very involved in his kidnapping watching him to decide... something, but whatever it is has to do with a death match.
The depressing thing is that under most circumstances, he'd have more room to talk them out of it. He can't-- physically cannot-- die, and he can't-- mentally-- be the last one left alive if it means other people are going to die for him. Or be killed by him, even worse. But as he fiddles with his hands and feels the mounting fear and confusion grow, the normal push behind it, deep from his amygdala, is... missing. After almost eight years, he doesn't feel the other guy.
These people were able to do what he never could.
This made everything a lot more dangerous. He can't think of how long they'd have to have been studying him to pull this off, and what level of technology they have to implement it. And with the Hulk out of the picture, it was a lot less obvious what they wanted from him.
He's running out of time to stall. His eyes dart around the room as he clears his throat to speak, standing in the middle of the room away from the walls and the weapons, playing with the legs of his glasses.
"So," he says, smiling nervously. "What exactly is this all about?"
What is your character scored: A 7 or so, probably. Without being able to access the Hulk, he's obviously a lot less powerful, but more stable. He's very intelligent, but he had been living in a very stressful situation when he was on the run, which probably impacted his own health. He has a good knowledge of medicine and is used to practicing it in conditions like he'd find in the games, having to make do with what resources he has. He's also good at hiding himself and staying unnoticed, though he's usually doing it in a crowd of people and not the wilderness. He's picked up a few mechanical skills along his travels, because he had to do most things for himself, so he can repair basic machinery if he needs to. He's also been trained in aikido. This is useful for defending, but aikido is designed to defend against an attack without actually injuring the attacker, so it can't really be applied offensively. His skills mostly amount to being able to avoid or recover from injury, but not much by way of actively attacking.
